Here is some background on some of nature’s foods and vegetables and their benefits:

Chickpeas

The potential health benefits of chickpeas include improved glucose levels, lipids and insulin levels for diabetes. The iron, phosphate, calcium, magnesium, manganese, zinc and vitamin K content present in chickpeas all contribute to building and maintaining bone structure and strength. Chickpeas contain significant amounts of fibre, which helps lower the total amount of cholesterol in the blood, thereby decreasing the risk of heart disease.

Quinoa

Quinoa is naturally gluten-free and contains iron, magnesium, phosphorus, potassium, calcium, B-vitamins, vitamin E and fibre. It is one of only a few plant foods that are considered a complete protein and comprised of all nine essential amino acids.Quinoa also has a high protein to carbohydrate ratio when compared to other grain products.

Beetroot

Beetroot is a good source of iron and also contains nitrates, magnesium, betaine, and other antioxidants (especially betacyanin).Beetroot is high in iron which helps to treat anaemia and tiredness. It is also rich in folic acid which helps to reduce the risks of birth defects if taken before conception and during the early stages of pregnancy.

Oats

Full of fibre, oats are a rich source of magnesium, potassium and phytonutrients. They contain a special type of fibre that helps to lower cholesterol and prevent heart disease. Magnesium works to regulate blood-sugar levels, and research suggests that eating whole-grain oats may reduce the risk of type 2 diabetes.

Amaranth

Amaranth is richer in iron, magnesium and calcium than most grains; it can help keepanaemiaand osteoporosis at bay. It excels as a source of fibre, mostly insoluble, which is of help in reducing the risk of a variety of diseases, including heart disease, certain cancers and digestive-tract conditions.

Cocoa

Cocoa is associated with decreased blood pressure, improved blood vessel health and improvements in cholesterol levels thanks to its flavonoids antioxidants. Cocoa is one of the highest sources of these powerful group of antioxidants known as polyphenols, Containing the substance phenethylamine, cocoa may also have the ability to boost endorphins; our “feel good” chemicals.

Spinach

Spinach contains more nutrientsper caloriethan any other food on the earth. It is loaded with Vitamins A, K, D, and E and various other trace minerals. It is a good source of Omega 3 fatty acids and contains anti-cancer and anti-inflammatory antioxidants and alkalizes the body.

Kale

Move over spinach, you've got some fierce competition. Kale contains a type of phytonutrient that appears to lessen the occurrence of a wide variety of cancers, including breast and ovarian. Though scientists are still studying why this happens, they believe the phytonutrients in kale triggers the liver to produce enzymes that neutralize potentially cancer-causing substances.

Chia

Chia seeds deliver a massive amount of nutrients with very few calories. Chia seeds are loaded with antioxidants, almost all the carbohydrates in them are fibre, and they are high in quality protein and Omega 3 fatty acids and contain many important bone nutrients.

Broccoli

Broccoli contains very high levels of fibre (both soluble and insoluble) and is also a rich source of vitamin-C. In addition, broccoli is highly rich in vitamin A, vitamin K, B-complex vitamins, zinc, phosphorus, iron, and phytonutrients. Broccoli can help to prevent osteoarthritis and protect the skin against the effects of UV light. It also helps to reduce bladder cancer risk.
